Had a shoot recently where the photographer kept steering me toward poses we’d never talked about, stuff that was well past my limits. I said no and wrapped early. Now I feel weirdly guilty, like I made a fuss over nothing. Was I in the wrong? And how do you shut that down while it’s happening?

You weren't wrong at all, you did the right thing. The limits you set and the shot list you agreed are the deal. Anything past that needs a fresh yes, not a nudge and definitely not pressure. Ending a shoot to protect a boundary is the professional move. If a photographer guilt-trips you over it, he's the problem, not you.
— Consent is the whole game.
In the moment, say it flat out: that's outside what we agreed. Offer the pose you did sign off on. If he keeps pushing, get dressed and go. You don't owe anybody a finished set. After, tell people you trust quietly and leave an honest review. And bring a chaperone next time, that's a completely normal thing to do.
